Methi Vadi (No Fry)
Maharashtrians love frying Kothimbari Vadi at home; you even see it sold in local markets. While that is made from Coriander leaves, I have given it a Methi twist making Methi Vadi and further it’s not fried. We first stream it and then in few drops of oil give it shallow fry till golden brown with sesame seeds. Enjoy.
Ingredients :
1 big bunch finely chopped Fenugreek (Methi)
1 cup Gram Flour (Besan)
1/4 cup Rice Flour (Chawal ka atta)
Crushed Ginger & Green Chillies
2 tsp roasted crushed Peanuts
1 tsp + 1 tsp White Sesame Seeds (Safed Til)
1/2 tsp Turmeric Powder (Haldi)
1 tbs Coriander Powder (Dhaniya Powder)
1/2 tsp Garam Masala
Pinch of Asafoetida Powder (Hing)
Salt as per taste
1/2 lemon juice
Water
1.5 tbs Oil
Method :
Take a mixing bowl take 1 big bunch finely chopped Methi (wash and finely chop it and make sure it's dry before making the vadi mixture)
Add 1 cup Gram Flour (Besan)
Add 1/4 cup Rice Flour (Chawal ka atta)
Add crushed Ginger & Green Chillies
Add 2 tsp roasted crushed Peanuts
Add 1 tsp White Sesame Seeds (Safed Til)
Add 1/2 tsp Turmeric Powder (Haldi)
Add 1 tbs Coriander Powder (Dhaniya Powder)
Add 1/2 tsp Garam Masala
Add a pinch of Asafoetida Powder (Hing)
Add Salt as per taste
Add 1/2 Lemon juice
Mix everything well with hands
Add a little Water and combine well
Make a soft dough out of this mixture
Place it on a steamer plate and spread it even
Keep this plate in pre heated steamer
Cover the lid and let it nicely cook
Once cooked, let it cool down and cut into pieces
Further heat 1.5 tbs Oil in a pan
Add 1 tsp Safed Til
Add cut methi vadi and fry until its nice golden-brown
Take them on a serving plate
Enjoy Scrumptious Methi Vadi
