Place seaweed, then place the scallop quarters on it. Spray potato foam on a scallop shell, top with oscietra caviar. 🦴BONE MARROW WITH OSCIETRA CAVIAR: Grill a bone on charcoal for 10 minutes. Put it in a woodfire oven for another 3 minutes. Torch the marrow. Season with a pinch of ground pepper. Top with oscietra caviar.
