Quick brunch recipes to brighten up your Sunday 

 

We might have seen family and friends visiting nearby restaurants and coffee houses on a daily basis for their morning brunch. Which all together costs a heavy amount on a daily basis with a sheer waste of time and energy. 

Thus, there is no need to head up to your nearby cafes and shops early in the morning as your own kitchen can be a marker of all the fancy and sophisticated brunches you are craving for. 

Let's get started with delicious mouth watering recipes which, do note, take not more than twenty minutes to be cooked and served. 

1. Flattened Rice served with ginger tea: 

One of the most traditional styles of Indian brunch is flattened Rice (Poha) and tea topped with ginger and cardamom. 

Ingredients: 

a. Flattened Rice (Poha) 

b. Sugar, turmeric 

c. 3 spoons Oil 

d. Salt and pepper 

e. Chopped onions, potatoes, tomatoes or any other vegetables according to preference. 6. Coriander 

f. Some curry leaves for toppings

 

 

Soak the flattened Rice with some sugar and turmeric for ten to twenty minutes prior to brunch time, then add oil in a pan where you can add some Cumin seeds along with pepper and chillies. 

In addition to this add your favourite vegetables which makes it healthy and add flavours. Then add your flattened Rice to the veggies. 

Steam for two to three minutes and serve with some curry leaves and ginger tea. 

 

2. Banana split 

An American ice cream based dish, Banana split is one of the most nutritional and healthy brunch to work in your kitchen this Sunday. 

Ingredients:

a. 2 bananas 

b. 2 tbsp nut butter (almond or cashew butter) 

c. 4 scoops of natural frozen yoghurt 

d. A handful of berries (like strawberries, blueberries and raspberries) 

e. 4 tbsp granola

 

Peel the bananas and split them lengthwise and place them in bowls. Spread some nuts, butter, jam or any other topping according to wish over the banana halves. Now place the scoops of frozen yoghurt on top. 

Add the berries and scatter them over the granola and your Banana split is ready to be served with some sugar coated cold coffee. 

 

3. Pancakes 

Pancakes are brunch staples of so many people around the globe and thus we are here discussing it as one the best things to have on a Sunday.

Ingredients:

a. Banana, peeled and chopped roughly 

b. 2 eggs 

Whisk egg in a bowl, add the banana and mash together to form a batter, then heat one tbsp of coconut oil or butter in a frying pan and pour in the batter to create a thin pancake. Let the pancake cook through and flip to let the other side cook thoroughly. 

Serve with fresh strawberries and yoghurt, cinnamon, butter, pure maple syrup, nut butter, seed sprinkle, and raw honey, or your desired toppings.

4. Sandwiches with some smoothies 

Sandwiches can be termed as one of the easiest ways to satisfy your stomach.

Ingredients: 

a. Whole grain wheat bread 

b. Potatoes, onions, capsicum, paneer (according to choice) 

c. Tomato ketchup 

d. Oil 

Boil your potatoes in a container for twenty to thirty minutes, then add some chopped onions and tomatoes. A batter for the same could be prepared. 

Coat the batter on both sides and bake it with oil. 

Finally, serve them with tomato ketchup or green curry.
