İstanbul Kültür Sanat Vakfı's video: Ele tirel Yemek Program Critical Cooking Show: Alt n Suyu Gold Water

Altın Suyu: Zeytin ve zeytinyağı peyzajları Mutfak مطبخ Atölye Zeytin ağacı, Mezopotamya’nın canlı bilgisini taşır. Çok eski zamanlardan beri bölgede yaşamı, barışı ve dayanışmayı temsil eder. Zeytin ağacının yetiştirilmesi toprağın bileşimi ve mülkiyetini de belirler. Toplumsal ilişkiler ve çalışma ilişkileri, aileler, müşterekler ve kooperatifler, zeytin ağacı yetiştiriciliği etrafında örgütlenmiştir; zeytin ağacının dikiminde, zeytinlerin toplanması ve işlenmesinde kullanılan aletler de bu ilişkileri gözler önüne serer. Zeytin ve zeytinyağı, bakım, hijyen, ilaç, beslenme, lüks ürünler, gıda, yakıt gibi pek çok alanda kullanılır. Mutfak مطبخ Atölye, “Altın Suyu”nda bu bilgiyi zeytinyağlı yeşil fasulyenin yapımıyla birlikte (zeytinyağı bölgedeki bütün tariflerin ana malzemesidir) bölümler halinde sunuyor. Mutfak مطبخ Atölye üyelerinden birinin mutfağında başlayan bölüm, Kilis ve İdlib’deki zeytin ağacı bahçeleri, Oylum Höyük Arkeolojik Sit Alanı’nı ve Gaziantep’teki Arkeoloji Müzesi’nde çiftçilerle ve farklı alanlardaki uzmanlarla yapılan röportajlarla devam ediyor. “Altın Suyu”, tarifi pişiren başkahramanı takip ederken, zeytin ağacının ve ürününün Mezopotamya’nın arkeolojisi, ekolojisi, manzarası, gündelik yaşamı ve siyasetinde taşıdığı anlamı gözler önüne seriyor. Eleştirel Yemek Programı, mutfağı tasarım odaklı düşüncenin ve üretimin merkezi olarak yeniden hayal eden filmler, dersler ve performanslardan oluşan dijital bir video serisi. Bu program, "Empatiye Dönüş: Birden fazlası için tasarım" başlığıyla düzenlenen 5. İstanbul Tasarım Bienali kapsamında gerçekleştiriliyor. Bu video, Hollanda İstanbul Başkonsolosluğu ve Birleşmiş Milletler Mülteci Örgütü'nün (UNHCR) desteğiyle gerçekleştiriliyor. *Bu filmdeki bazı sahneler bazı izleyicilerimizi rahatsız edebilir. // Gold Water: Landscapes of Olive and Olive Oil Mutfak مطبخ Workshop Olive tree holds the living knowledge of Mesopotamia. Since ancient times, it represents life, peace, and solidarity in the region. Soil composition and land ownership are tied to its cultivation. Social and labour relationships, families, commons, and cooperatives organise around its farming; the objects utilised in its planting, picking, and processing also demonstrate these relationships. Olive and olive oil have uses of care, hygiene, medicine, nurturing, luxury, food, fuel, and several others. In “Gold Water”, Mutfak مطبخ Workshop presents this knowledge in different chapters, brought together by the making of green beans with olive oil – olive oil being the infrastructure of any recipe in the region. The episode starts in the kitchen of a Mutfak مطبخ Workshop member, and transitions to olive tree gardens in Kilis and İdlib, Oylum Höyük Archaeological Site, and Museum of Archaeology in Gaziantep, while interviewing farmers and other experts at different sites. “Gold Water” follows the protagonist making the recipe, and introduces the significance of olive trees and its produce in the archaeology, ecology, landscape, daily life, and politics of Mesopotamia. The Critical Cooking Show is a digital programme of films, lectures and performances that reimagine the kitchen as a space central to design thinking and production, screened as part of the 5th Istanbul Design Biennial – Empathy Revisited: Designs for more than one.
