Its crispy outer shell encapsulates a luscious filling of khoya, nuts, and spices. Portions serving: 7-8 pax Preparation time: 05 min Cooking time: 120 min Calories per portion: 389 cal Ingredients: For stuffing: Ghee 1 tbsp Charoli 2 tbsp Cashew nut chopped 2 tbsp Almond chopped 2 tbsp Rasines chopped 2 tbsp Desiccated coconut ½ cup Green cardamom powder 1 tsp Powdered sugar 50-60 gms Khoya 300 gms For gujiya dough: Refined flour 200 gms Ghee 60-70 gms Salt a pinch Water as required Ghee for deep frying Chopped pista for garnish Method: Gujiya Stuffing: 1. Prepare the Ingredients: - Heat a pan and add ghee. - Add charoli and toast for a few seconds until fragrant. - Incorporate chopped cashew nuts, almonds, and raisins, toasting until aromatic. - Toast desiccated coconut until it turns light golden brown. - Remove the toasted ingredients onto a plate and set aside. 2. Combine the Ingredients: - While the mixture is still warm, add powdered sugar and green cardamom powder. - Mix well to ensure even distribution of flavours. 3. Prepare the Khoya: - Heat another pan and add khoya. - Saute it on low flame until it releases ghee and attains a rich aroma. - Once the khoya reaches the desired stage, remove from heat. 4. Final Assembly: - Combine the prepared mixture with the khoya, ensuring thorough mixing. - The gujiya stuffing is now ready to be filled into the dough. Gujiya Dough: 1. Prepare the Dough: - Take a flat plate and add refined flour. - Rub ghee into the flour until it resembles breadcrumbs. - Add a pinch of salt and incorporate it into the flour. - Knead the dough with water until it forms a tight, smooth consistency. - Cover the dough with a damp cloth and let it rest for 10 minutes. Making Gujiya: 1. Rolling the Dough: - Take a small portion of the dough and roll it into a thin sheet. 2. Filling the Gujiya: - Place the rolled dough over a gujiya mould. - Add a portion of the prepared stuffing into the centre of the dough. 3. Sealing the Gujiya: - Moisten the edges of the dough with water. - Close the mould firmly, pressing to seal the edges. - Trim off any excess dough and demould the gujiya carefully. 4. Frying the Gujiya: - Heat ghee in a pan over medium to low flame. - Carefully add the gujiyas to the hot ghee. - Fry them on low heat, stirring occasionally, until they turn golden brown and crisp. 5.
