“Tsukuda-ni(佃煮)” means a food cooked through simmering in soy-sauce-based broth. Usually, we use sake, mirin and sugar in addition to soy sauce for the broth. “Tsukuda-ni” is named after the place Tsukuda Island in Tokyo, where a variety of Tsukuda-ni were sold in the Edo period, including with fish, shell, seaweed and Caelifera. “-Ni(煮)” is from “Niru (煮る)” which means simmering in Japanese. “Tsukuda-ni” is developed to preserve food and therefore, we use much amount of soy sauce and sugar to cook compared with other Japanese food. The taste is intense and we don’t eat just Tsukuda-ni. We normally eat a small portion of Tsukuda-ni with rice. If you are interested in other Tsukuda-ni variation, check them out.
