Japanese boiled pumpkin has an unique flavour due to the combination of pumpkin's sweetness and soy sauce's salty taste. Every time when I eat this, the typical flavour of Japanese dish reminds me of my family in Japan. For Japanese cooking, we often remove corners of vegetables before simmering in order to prevent them from breaking up. The cutting technique is called "Men-Tori" (面取り). The corners are of course edible and we use them for the ingredients of miso soup afterwards typically. We don't need any Dashi for this recipe and the cooking process is pretty simple.
