Kabu = turnips no = like "of" Senmai = thousands of smth Zuke = pickled :-) I looooooove pickled turnips! This is one of the most popular traditional Japanese pickles from Kyoto in wintertime. This cooking method was found around 1850, so it is a relatively new tradition in our history. We call it “Kabu no Senmai Zuke” in Japanese. “Senmai” means like “thousand-times-sliced”. It means that they sliced so thin and put even more than thousand of sliced turnips in a cask. Originally, they use a special type of turnips from the region, called “Shogoin Turnip”. It’s so huge, sweet and juicy. (It’s around 2-5kg giant.) Senmai Zuke was made from November to March when they can harvest the Shogoin turnips. In my recipe, I used normal turnips in order for us to cook at home. If you have any chance to visit Kyoto, you should try the real one!
