Hey, Folks! Today, let's look at 2 easy meals you can incorporate into your Ketogenic / Keto lifestyle! Also, I wanted to discuss why Intermittent Fasting hasn't been working recently due to quarantine! I hope you enjoy the video! Brunch Risotto -Beef Broth: 2 cups/400g -Cauliflower Rice: 600g -Butter: 28g -Whole Milk (Fairlife Brand): 1/4 cup/58g -Heavy Whipping Cream: 1/4 cup/50g -Yellow Onion, chopped: 70g -Button Mushrooms, sliced: 260g -Garlic, minced: 10g -Warcestershire Sauce: 1t/5g -Smoked Gouda Cheese, grated: 100g -Seasonings: Salt, White Pepper, and Nutmeg to taste In a pot, boil broth. Add cauliflower rice. Stir and cover until boiling. Uncover and reduce heat. Add milk and heavy whipping cream. Stir and bring to boil on lower heat, uncovered. Add Warcestershire sauce and seasonings. Stir often and leave uncovered until almost all liquid has evaporated. In a nonstick saute pan, melt butter. Add onions and cook until tender. Reduce heat and add garlic. Saute together a couple minutes (don't let garlic burn!) Add mushrooms until cooked through and all moisture has evaporated. Add mushroom mixture to cauliflower pot and mix together. Turn off heat and add cheese. Mix everything together. Brunch Risotto Nutrition (Per 1 batch/1000 grams) 975 Calories 62.8 g Fat 37.7 g Net Carbs 55.8 g Protein ----------------------------------------------- Cabbage Pasta -Green Cabbage, inner leaves, sliced: 200g -Olive Oil: 1T/14g -Garlic, minced: 5 g -Parsley, bunch/handful -Season to taste -Parmesan, grated: 20g Wash and steam cabbage in microwave in a covered tupperware for about 1 minute. Heat olive oil in nonstick saute pan on low setting. Add garlic and allow garlic to simmer for a couple minutes. Add steamed cabbage and stir, being sure to coat each leaf with oil. Cover and let simmer for a few minutes. Add parsley and stir. Cover until parsley wilts. Transfer cabbage to plate and top with Parmesan cheese.
