I share with you some really yummy, delicious and refreshing popsicle recipes! These are great because they are dairy-free, sugar-free and really easy to make! Watermelon Popsicles | Makes 4 1 cup blended watermelon 1/3 cup lite coconut milk 1 tsp honey 1/2 tsp vanilla juice of 1/2 a lime 1 1/2 kiwis // Pour blended watermelon 2/3 way into the mold. Freeze for 1 hour. Insert popsicle sticks. // Mix coconut milk, honey, and vanilla together. Add a layer of the coconut mixture to the popsicle molds. Freeze for 1 hour. // Peel and blend the kiwis with the lime juice. Fill the remaining space in the popsicle molds and place in freezer until completely frozen. About 3-4 hours. 2. Coconut Fudgsicles | Makes 2-3 6 oz lite coconut milk 35 g baking cocoa (unsweetened) 2-3 tbsp honey (or more to taste) 1/2 tsp vanilla pinch of salt // Place all ingredients in the blender and blend for 1 min, or until completely blended. // Taste and add more honey if needed. // Let mixture sit for 30 minutes for extra creaminess. The coconut milk completely hydrates the cocoa. // Pour into popsicle molds. Freeze 1 hour. // Insert popsicle sticks. // Freeze 3-4 more hours or until completely frozen. 3. Coconut Mango Pops | Makes 4 - Mango Puree 1 cup frozen mango chunks 3/4 cup coconut water (unsweetened) - Coconut Mixture 1/2 cup lite coconut milk 1 tbsp honey 1/2 tsp vanilla // In a blender, puree mango chunks and coconut water. // Combine coconut milk, honey, and vanilla in a separate bowl. // Pour mango puree into half of the popsicle mold and the coconut mixture into the remaining space of the mold. // Take a popsicle stick and swirl the two layers together to make a pretty swirl effects. // Freeze for 1 hour. // Insert popsicle sticks. // Freeze for an additional 3-4 hours.
