I got a ton of requests last week for my lemon curd recipe that I used to fill my crepe cake. Instead of just writing down the recipe, I thought I would create a video. Here is how you make my homemade lemon curd. SUBSCRIBE for more great recipes! http://bit.ly/2dZcaoZ HOMEMADE LEMON CURD 3 egg yolks 3 eggs 3/4 cups sugar 2/3 cup lemon juice 1 Tbs. lemon zest pinch of salt 4 Tbs. unsalted butter 2 tsp. vanilla extract In a heat safe large bowl, combine 3 eggs, 3 egg yolks, 3/4 cup sugar, lemon juice, lemon zest and pinch of salt. Whisk well to thoroughly combine. Fill a medium sized pot with 3 inches of water and bring to a simmer over medium heat. Place the bowl on top and cook lemon filling for about 8 to 10 minutes or until the lemon mixture coats the back of a spoon, whisking constantly. Remove lemon filling from heat, place in an ice bath and whisk in butter and vanilla. Allow the curd to cool completely then store in an airtight container in the refrigerator.
