Crispy, flaky & flavourful, these puffs make for a great snack. Try this recipe now & you will thank me later Paneer & Veggies Puffs Ingredients Potatoes (boiled) - 1(medium) Puff pastry sheets( get them easily online) - 3 Oil - 1 tbsp Mustard seeds - ½ tsp Cumin seeds - ½ tsp Garlic cloves - 3-4 Ginger - ½ inch Green chillies - 1-2 Onions - ½ cup French beans - ½ cup Carrot (chopped)- ½ cup Green peas (boiled) - ½ cup Paneer (grated)- 100 gm Salt - to taste Turmeric powder - ½ tsp Fresh coriander leaves (chopped) - 1 tbsp Mozzarella cheese - ¼ cup Milk- to brush the puffs All purpose flour - for dusting Method:- - Preheat the oven to 180°C. - Heat oil in a pan, add mustard seeds followed by cumin seeds & let them splutter. - Add the chopped onions & sauté till translucent. - Make a paste by grinding together the garlic, ginger and the Green chillies in a mortar with the help of a pestle. Add this to the pan and sauté till the raw aroma disappears. - Now throw in the beans followed by carrots and finally green peas(I’ve used frozen ones here so they don’t take much time to cook) and sauté them till they are slightly soft. - Mash the potatoes and add to the pan and mix well. - Add then grate the paneer directly into the mixture. - Season with salt and turmeric powder and mix them all together to combine well. - Transfer the mixture on a plate and let it cool. - Add the mozzarella and mix well. Keep aside. - Dust some flour on your counter and place the puff pastry sheets. Place a spoonful of the vegetable filling in the centre of each sheet. - Fold the puff sheet from one side over the mixture and overlap and seal with the opposite side like shown in the video. - Or you can also completely close the puffs too. For that put a spoonful mixture in the centre of the puff sheets and close it diagonally, then seal with the help of a fork on the sides.. -Brush the puffs (only the pastry part) with milk and place the them on a baking sheet lined with parchment paper. - Bake in the preheated oven for 18-20 minutes or until they are puffed up really well and golden brown. - Remove from the oven and let them cool slightly before serving.
