🤤SUPER EASY Crockpot Enchilada Casserole (Save this recipe for later): 1. Add one diced onion, can of rinsed and drained black beans, 3 boneless skinned chicken breasts, a packet of fajita seasoning, & about 3/4 can of enchilada sauce (15 oz can) to a crockpot. Cook on high for 4 hours. 2. Shred chicken in crockpot 3. Add a bag of frozen corn, mix, cook for another 15 mins. 4. Add cut flour tortillas (I used about 8) and mix into chicken mixture. 5. Add shredded cheese (I used Mexican blend) on top and then put the lid on for another 5-10 minutes until the cheese is melted. 6. Add your enchilada casserole to a bowl and top with your favorite toppings. We used sour cream & valentinas hot sauce, but it would be great with shredded lettuce, avocado, jalapeños too!! ❤️Save this recipe & let me know if you try it!!!
