In today's episode, guided by the knowledgeable Rigzin Chodon, a proud local, an independent researcher and fellow food enthusiast, we embark on a three-part journey through the vibrant food culture of this city. Our gastronomic exploration commences at the charming Bread Lane of Chutay Rantak, where the enticing aroma of freshly baked bread beckons us. Here, we meet Naseer bhai, celebrated for his artisanal bread crafted in traditional tandoors. Sampling his kulcha and taftan is such a joy, each bite bursting with warmth and flavor straight from the oven. Next we visited Lalaji, a jovial Punjabi gentleman who shares his heartfelt journey of settling in Leh while running a sewing supply store. His personal anecdotes add a touching dimension to our exploration. Continuing with our endeavour, we indulge in the flavors of Ladakh with a visit to De Khambir Restaurant, where the delightful egg cheese khambir left our taste buds singing. Engaging in conversation with Tsetan Dolma, one of the dynamic owners, we are inspired by her dedication to preserving Leh's culture and traditions. Delving further into the region's rich heritage, we immerse ourselves in the captivating history showcased at the Central Asian Museum, each visit offering insights into Ladakh's past and cultural exchanges along the ancient silk route. As the day draws to a close, we bid farewell to Rigzin and culminate our journey at Namza Dining. Founded in 2016 with a mission to revive the lost cuisines of Ladakh, Namza Dining presents a feast of hand-crafted dishes inspired by the ancient silk route. From zathuk to yarkandi pulao, each dish is a testament to the deep passion and expertise of the culinary team.
