Ingredients:
- 750 gm Chicken
- 3 Onions, cut into thin slices
- 8 Garlic cloves, smashed
- Cashew nuts 12 pieces, grind and make a smooth paste
- 4tbsp + 1tsp Coriander Seeds
- 6 dry Red Chilies
- 1 teaspoon red chili powder
- Garam masala powder, 1 tsp
- Cow Ghee, 1 tbsp
- Salt, as per taste
- Mustard Oil, 4tbsp
Preparation:
- In a wok dry roast 4 tbsp. coriander seeds along with dry red chilies for 2 minutes on medium heat or till you get a warm smell of the spices.
- Grind and make a smooth ground powder.
- Marinate Chicken with 3/4 of the roasted ground spice powder, garlic paste, chilli powder and 3 tbsp mustard oil
- Set aside marinated chicken in fridge 30 minutes
Process:
- Heat 4 tbsp mustard oil in a wok
- Add 1tsp whole coriander seeds and sizzle on medium heat for 20 seconds
- Add onion slices
- Fry on medium heat till they turn soft and translucent
- Add marinated chicken and fry them on medium heat
- Sprinkle salt, and mix well
- cover the wok with a lid, cook for 4-5 minutes on medium heat
- uncover, mix gently, cover again with a lid, continue cooking on medium heat for another 4 to 5 minutes
- Add cashew paste and cook for another one minute
- Add water and cook it covered till the chicken is done
- sprinkle the rest of roasted ground spice powder
- add one teaspoon garam masala powder
- add one tablespoon cow ghee and give a gentle mix
- turn off the heat and keep it covered
- Enjoy with a place of white rice
