Add less salt especially if using salted butter. *Poached eggs* 1. Strain the watery part of the egg whites using a tea strainer. This step helps the eggs set better as the watery part of the egg whites create stringy bits 2. Fill a deep pan with 5-6 inches of water, add 1 tsp vinegar and bring it to a simmer. The vinegar keeps the egg whites from getting stringy 3. Gently pour in the eggs one at a time and simmer for 2 minutes (runny yolk) or 4 minutes (set yolk) 4. Remove the eggs using a strainer or slotted spoon to drain excess water from the poached eggs *Paprika butter* 1. Melt 3 tbsp butter over low flame. Don't use high flame or the butter will brown 2. When the butter simmers, add the paprika/chilli powder/chilli flakes and switch off the flame. Mix until well combined ________________________________________ SUBSTITUTES: • Can't eat raw garlic? Use 1/4 tsp garlic powder Boil the garlic clove and then grate it • No fresh herbs? Sub with dried herbs. The dish tastes good without any herbs too. • Don't like runny eggs? Simmer the eggs for 4 minutes and the eggs will set well • No yogurt? Use the hung curd method shown in the video ________________________________________ TIPS: • Add very less salt to the yogurt sauce if using salted butter • Poach the eggs in gently simmering water or they wont set well • Refrigerate extra paprika butter in an airtight container • If using hung curd, do not throw the leftover water. The liquid is whey and is very nutritious.
