This healthy broccoli salad is refreshing and can be had on its own or paired with tofu, meat or seafood. The Thai inspired creamy peanut sauce pairs perfectly with the fresh broccoli, sweet apples and tart onions making this salad incredibly irresistible! It can be served as soon as tossed or stored up to 10 hours in the refrigerator. Thinly slice 1 medium onion, mix with 1 tsp lime/lemon juice and set aside. This helps onions digest easily and reduces onion breath 2. Separate the stem and florets from 200g/1 medium head of broccoli. Cut the florets into bite sized pieces and thinly slice the stem 3. Blanch broccoli in boiling salted water for 1 minute and transfer into cold water. Drain once cooled and set aside 4. Whisk together dressing ingredients. Add 1 tsp water at a time to thin the sauce to a spreadable consistency. Let the dressing be slightly thick as the vegetables will release some water too 5. Slice 1 apple and mix together with broccoli, onion and dressing in a large bowl 6. Serve immediately or after chilled for 1 hour. It can also be stored up to 10 hours in the refrigerator _______________________________________ SUBSTITUTES: • No fresh ginger Substitute with 1/2 tsp ginger powder or 1 tsp ginger juice • No peanut butter Almond butter works too • No chilli flakes Chilli powder/black pepper can be used too _______________________________________ TIPS: • Salad and dressing can be store separately for up to 3 days in the fridge and tossed when needed.
