Annakoot - Special Mixed Vegetable sabzi, made on the next day of Deepawali, Also know as गड़ की सब्जी INGREDIENTS : French Beans - 8 to 10 Taro root - 1 Radish leaves- few chopped Carrot - 1-2 Ridged Gourd - 1 Pointed Gourd - 2 Broad beans - 4 to 5 Capsicum - 1 big Cabbage - 1 piece (50 gms) Round gourd - 3 (50 gms) Okras भिन्डी - 4 to 5 (40 to 50 gms) Potatoes - 3 (300 gms) Eggplant - 2 (100 gms) Raw Banana -1 (100 gms) Tomatoes -2-3 Cauliflower - 1 floret (60 to 70 gms) Bottle Gourd - 1 piece (100 gms) Spinach - 50 gms Bitter Gourd - 1 (50 Gms) Pumpkin - 1 piece (100 gms) Pomegranate - 2tsp Oil - 6 to 7 tsp Cumin seeds - 2 tsp Souf - 1tsp Asafoetida- 1 pinch Turmeric powder - 2 tsp Coriander powder- 4 tsp Salt- 2 tsp or to taste Red chili powder - 1 tsp Garam Masala - 1/2 tsp Veg/sabji masala - 2tsp Ginger past - 3 tsp Lemon juice - 1tsp Green coriander - 6 to 7 tbsp (finely chopped ) Green chili- 5 to 6 ( finely chopped ) (optional)
