Creating delicious, nutritious meals in a dutch oven, off grid cooking, enjoying more with less and taking a step back - Glenn & Maureen share their story of starting over while they prepare and cook a Poor Man's Roast Beef dinner over the off grid fire pit on their 40 acres in the wilderness of Ontario Canada. Glenn gathers hardwood from the forest floor, starts a fire bushcraft style with a ferro rod and birch bark, then adds maple wood, preparing hardwood coals for slow cooking with a Dutch Oven. Maureen prepares their "Poor Man's Roast" meal with carrots, onions, potatoes and a marinated cross rib roast beef, also known as a pot roast or chuck roast. (the beef marinade recipe is at the end of the description) Glenn takes over, setting the Dutch Oven over low coals, for 4 hours, turning it every 15 minutes - the Dutch Oven 1/4 turn clockwise, then turn the lid back 1/4 turn counterclockwise to ensure even cooking. Maureen reminisces about using a one burner camp stove along with cooking over an open fire because that's all she and Glenn had when they first moved onto their wilderness property. During the 6 months waiting for the homestead to be built, Maureen mastered off grid cooking on a budget, creating thrifty one pot meals for two. Cooking over hardwood coals allows her to attend to other chores nearby while waiting for their meals to cook. Their story of living a frugal life includes downsizing their lives, and voluntarily starting over a few times through the years. Living through some tough times, they learned how to be frugal with the food budget. Travelling abroad, and camping meant travelling light with minimal cooking utensils and basic ingredients. So Maureen created simple delicious, nutritious meals that were easy and simple to prepare. They named this recipe the "Poor Man's Roast" because it uses a low cost cut of meat, along with Maureen's proven roast beef marinade recipe, slow cooking time and temperatures to turn a typically tough cut of beef into a delicious. tender beef roast .. it's a frugal meal but very tasty and nutritious. Glenn talks about planning and saving towards achieving their goal of living a simple life in the wilderness of Ontario. Preparing for retirement, they downsized their budget and belongings so they could purchase their dream property. Maureen serves up the tender cross rib roast, vegetables, fresh salad and grated carrot for a meal that Glenn says is as good, tender and flavourful as the more expensive roasts she's cooked in the past. We'd love to read your story, leave a comment below Marinade recipe - 1 or 2 crushed garlic cloves, 1/8 cup apple cider vinegar, 1/4 cup olive oil, paprika, salt & pepper, Worcester sauce and soya sauce to taste. Place roast in a casserole, pour marinade over, place in fridge for a couple of hours or overnight, occasionally basting the roast with the marinade.
