Carol - Thrifty Chic Housewife's video: Enchilada Skillet Dinner With Escabeche Slaw Pantry Meal

A well stocked pantry makes a weeknight meal quick and easy! You all asked so here we go... let's use some of home canned goodies to make an amazing meal! 2 c. Roasted Corn Stock or Chicken Stock 1 pint Enchilada Sauce 1 pint Chipotle Black Beans 1/2 - 1 c. Chipotle Pepper Salsa 1 c. frozen corn kernels from Roasted Corn Stock 1 chicken breast, shredded chicken, or browned ground beef 1 c. rice 1 c. shredded cheese Saute chicken breast or brown ground beef if using fresh. Add rice, saute 1 minute. Add stock, sauce, black beans, salsa, and corn. Bring to a simmer and simmer ~30 minutes until rice is done and sauce has thickened. Add cheese and allow to melt. Toppings: avocado, sour cream, crushed tortilla chips 1 pint Escabeche 2-3 c. shredded cabbage Olive oil or Avocado oil Chopped fresh cilantro Salt and pepper to taste Pour half of brine from escabeche into a large bowl. Whisk in ~2 T. oil. Chop escabeche vegetables. Add all veggies to bowl and mix with dressing. Season to taste.
