Green cardamom pods, हरी इलायची 1 tsp Lemon juice, नींबू का रस 2 tbsp Saffron water, केसर का पानी Other Ingredients Oil for frying, तेल तलने के लिए For Coating Icing sugar & Saffron color, चीनी और केसर का रंग Little Water, पानी For Garnish Almonds, sliver, बादाम Pistachios (blanched & sliver) पिस्ता Silver wark, चाँदी का वर्क Process For Dough In a parat, add refined flour, ghee and mix it well until it has a crumbly texture. Add a pinch of salt, a pinch of baking soda, curd, chilled water and knead a semi hard dough. Add softened butter and knead it in soft dough. Divide the dough into layers and keep it aside to rest for 15-20 minutes. Take a lemon size ball, make a cavity and give it a desired shape. Keep it aside for further use. For Frying In a kadai, add oil, once it's medium hot, add balushahi and fry for 10-12 minutes until golden in color. Transfer it to a prepared sugar syrup and let it soak for a while. Keep it aside for further use. For Sugar Syrup In a kadai or sauce pot, add sugar, water, saffron strands, cardamom powder, green cardamom and cook for 15-20 minutes or until 1 string consistency. Add saffron water and mix it well. Keep it aside for further use. For Coating In a bowl, add icing sugar, saffron color, water and mix it well. Sprinkle it on the balushahi and transfer it to a serving dish.
