Bay leaf, तेज पत्ता 2 no. Garlic cloves, roughly sliced, लहसुन 2 medium Onions, roughly chopped, प्याज 1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट 1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर 1 tbsp Coriander powder, धनिया पाउडर 1 tsp Turmeric powder, हल्दी पाउडर 3 medium Tomatoes, cut into quarter, टमाटर 1 cup Curd, beaten, दही 6 no. Cashew nuts, काजू Salt to taste, नमक स्वादअनुसार 2-3 cups Water, पानी For Paneer Stuffing 200 gms Paneer, crumble, पनीर 1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल 3 no. Green chillies, finely chopped, हरी मिर्च 1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी 1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर 1 tsp dry Mango powder, आमचूर पाउडर ½ tsp Roasted cumin powder, भुना हुआ जीरा पाउडर Salt to taste, नमक स्वादअनुसार For Paneer Pasanda 500 gms Paneer, cut into slab, पनीर Prepared stuffing, तयार किया हुआ मिश्रण Salt to taste, नमक स्वादअनुसार A pinch of degi red chili powder, देगी लाल मिर्च पाउडर For Finishing Gravy Prepared gravy, तैयार की हुई ग्रेवी Water as required, पानी 1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी A pinch of Garam masala powder, गरम मसाला Salt to taste, नमक स्वादअनुसार ½ tsp Sugar, चीनी For Crispy Papad Roll 5-6 no. Papad, पापड़ Water as required, पानी Prepared paneer pasanda, cut into half, तैयार किया हुआ पनीर पसंदा For Roasted Papad Roll Roasted Papad, crumble, भुना हुआ पापड़ का चूरा Refined flour slurry, मैदा का घोल Prepared paneer pasanda, cut into half, तैयार किया हुआ पनीर पसंदा For Slurry 2-3 tbsp Refined flour, मैदा Salt to taste, नमक स्वादअनुसार Water as required, पानी Other ingredients Oil for shallow frying, तलने के लिए तेल 1 tsp Oil, तेल 4-5 no. Papad, पापड़ For Garnish Fresh cream, ताज़ा मलाई Coriander sprig, धनिया पत्ता Process For Gravy ● In a handi, add ghee, oil, once it's hot, add bay leaf, garlic, onions and saute it until translucent. ● Add ginger garlic paste, degi red chili powder, coriander powder, turmeric powder and saute it for a while. ● Add tomatoes, curd and cook it until tomatoes are mushy. ● Add cashew nuts, salt to taste, water and cook it for 10-12 minutes on medium flames. ● Transfer it to a bowl and let it cool down at room temperature. ● Transfer it to a mixer grinder jar and grind it into a smooth fine paste. ● Keep it aside for further use. For Paneer Stuffing ● In a bowl, add paneer crumble, tender coriander stems, green chillies, dry fenugreek leaves, degi red chili powder, dry mango powder, roasted cumin powder, salt to taste and give it a good mix. ● keep it aside for further use. For Paneer Pasanda ● Take paneer, cut into medium slabs, stuff it with the prepared paneer stuffing, cover it with another slab of paneer and shape it like a sandwich. ● Sprinkle some salt to taste, a pinch of degi red chili powder on both the sides. ● Cut it into halves and keep it aside for further use. For Finishing Gravy ● In the same handi, add prepared gravy, water as required and let it simmer for 10-12 minutes on medium flames. ● Add dry fenugreek leaves, garam masala powder, salt to taste, sugar and give it a good mix. ● Transfer it to a serving dish, place prepared fried paneer pasanda, garnish it with fresh cream, and coriander sprig. ● Serve hot with roti or naan. For Crispy Papad Roll ● Take papads, apply some water, place paneer pasanda onto the papad and seal the edges from all sides. ● Take a pan, add oil, once it's hot, place prepared papad rolls and fry them until golden brown. ● Transfer to an absorbent paper and keep it aside for further use. For Roasting ● Roast the papad, crush it and transfer it to a tray. ● Keep it aside for further use. For Roasted Papad Roll ● Take prepared paneer pasanda and dip it into prepared slurry. ● In a tray, add crushed papad, add paneer pasanda and coat it well. ● Take a pan, add oil, once it's hot, place prepared papad rolls and fry them until golden brown. ● Transfer it to an absorbent paper and keep it aside for further use. For Slurry ● In a bowl, add refined flour, salt to taste, water as required and give it a good mix. ● Keep it aside for further use. ***********************
