For this recipe, you will need:
-4 Small Sweet Potatoes
-1/2 Cup Brown Basmati Rice
-1 Cup Cooked Black Beans
-1 Tsp Ground Cumin
-1/2 Garlic Clove Minced
-1/2 Tsp Virgin Olive Oil
-1 Tsp Tomato Paste
-Pinch of Salt
-Shredded Cabbage or Romaine
-Hot Sauce to Taste
-Salsa
-Guacamole or make it yourself with 1 avocado, 1/2 clove garlic, tbsp lime juice, 2 tbsp chopped cilantro and generous pinch of salt
::Directions::
1. Pre-heat overn to 400 degrees and bake sweet potatoes for 40-45 minutes
2. In a pan, mix cooked rice, beans, cumin, garlic, olive oil, salt
3. Take potatoes and pry them open and spoon filling on top
4. Add guacamole, salsa, romaine and cilantro
5. Enjoy!
