Welcome back to our kitchen, everyone! Today, we're bringing you a seasonal delight: the Squash Sage Pull Apart Lasagna. We stumbled upon this incredible recipe on 'I am a Food Blog,' and couldn't resist adapting it to be gluten-free and vegan. Now, we must confess, we haven't made this before, so we're in for an exciting culinary experiment together! For this recipe, you will need: -2 Tbsp Olive Oil -1 2lb Butternut Squash (peeled, seeded and cut into 2" pieces) or buy prepackaged -1 Small White Onion Chopped -2 Garlic Cloves Chopped -1 Tbsp Fresh Sage Chopped -Salt and Pepper to taste -2 Cups Low Sodium Vegetable Broth -8oz Vegan Cream Cheese -8oz Firm Tofu -Pinch of Nutmeg -1 Tsp Lemon Zest -1 Cup Faux Parmesan Cheese -1 Large Faux Egg (we used flax meal) -1 Package Gluten Free Lasagna Noodles -1-2 Cups Faux Mozzarella -Crispy Sage Leaves to place on top ::Directions:: 1. Preheat over to 375 Degrees. Prepare noodles according to package while you prepare the mixture 2. In a large pan, heat olive oil over medium heat. Add in onion, garlic. sage and squash and cook until onions are translucent. About 8 minutes. 3. Add in broth and bring to a boil, reduce heat and simmer 15-20 minutes 4. To make the ricotta, place cream cheese and tofu in a bowl and mix well 5. To the ricotta mixture, add in nutmeg, lemon zest, salt and pepper 6. To make a flax egg, take 1 tbsp flaxmeal to 3 tbsp water and mix well. Add to main bowl and add in parmesan 7. Take squash mixture and place in blender to make sauce 8. Spray oil in dish to start layering 9. Place sauce and ricotta on top of lasagna and roll up, placing in dish. Add sauce on top to evenly cover the rolls 10. Top with mozzarella, remaining ricotta and sage 11. Place in over and bake for 45 minutes . For last 5 minutes, broil on high to brown the top 12. Allow to cool, serve and enjoy!
