Today, we're sharing our delicious Miso-Turmeric Chickpea Scramble recipe. This protein-packed dish is not only incredibly flavorful but also incredibly versatile. You can enjoy it on its own, pair it with toast or potatoes, or even use it as a filling for our Green Onion Crepes from earlier this season. So, let's dive in and whip up this savory and satisfying breakfast.
For this recipe, you will need:
-3 Cups Cooked Chickpeas
-1 Tsp Virgin Olive Oil
-2 Green Onions Finely Chopped
-1/2 Tsp Ground Turmeric
-1 Clove Garlic Minced
-1/4 Cup Chickpea Flour
-3 Tbsp Vegetable Stock or Water
-2 Tsp Light Miso
-Black Lava Salt and Pepper to taste
::Directions::
-In a bowl, add chickpeas and mash well leaving some pieces chunky
-In a heated pan, add olive oil green onion, chickpeas, turmeric and garlic and mix well
-Saute for about 30 seconds until fragrant
-Sprinkle chickpea flour and mix in
-In a bowl, add vegetable broth and miso and whisk well. Add to pan and mix well.
-Add in salt and pepper to taste
