Today, we're bringing you a vegan twist on a Korean classic: Jackfruit Bulgogi. Inspired by the Fit Men Cook Blog, this mouthwatering dish is typically made with beef, but we've revamped it to be plant-based and super quick using a pressure cooker.
Get ready to indulge in a hearty, flavorful meal that's perfect for Dad on Father's Day or any summer gathering. We'll guide you through the process, step-by-step, and show you how to create a dish that's both hearty and good for you.
For this recipe, you will need:
-3 Cans 14oz Jackfruit drained
-2/3 Cup Diced Red Onion
-Grapeseed or Olive Oil
-1 1/2 Tbsp Minced Garlic
-1 Asian Pear Grated
-5 Tbsp Low Sodium Tamari Sauce
-1 Tbsp Mirin
-2 Tbsp Sesame Oil
-1/3 Cup Maple Syrup, Honey or Agave
-1 1/2 Tbsp Sesame Seeds
-1 Tbsp Arrowroot
-Rice
::Directions::
1. Spray inside of pressure cooker with grapeseed or olive oil
2. In the pressure cooker, add in Jackfruit, onion, garlic, pear, tamari, mirin, sesame oil, sesame seeds, and arrow root.
3. Cook for 24 minutes, remove lid.
4. Take a wooden spatula and breakup jackfruit
5. Serve over rice and enjoy!
