@How To Roll and Cut Shortcake Dough
The shortcakes are so easy to mix and bake yourself that you may even forget about the store bought version. - See more at: http://cook123.com Ingredients For the dough: 2 cups flour 3 teaspoon baking powder 1 teaspoon salt 1/3 cup cooking oil 2/3 cup milk 2 tablespoon sugar Directions Preheat oven to 450 degrees F. For the dough: 1. Sift dry ingredients together. 2. Pour liquid ingredients all at once into dry mix and stir with a fork until mixture cleans side of bowl and rounds up into a ball. 3. Knead about 10 times, without using additional flour. 4. Roll out with as little pressure as possible to about ½ inch thickness. 5. Fold dough over and cut out two pieces at a time with a glass or other round cookie style cutter. 6. Bake biscuits for about 10 to 12 minutes until done. Be careful not to burn the bottom of the biscuits. TRANSCRIPT: There's all kinds of biscuit mixes on the market. It doesn't matter what it is. What you're basically making is what's known as a baking powder biscuit. It's not a drop biscuit. It's a rolled one. So it looks a little different. We're going to just put some flour down here. We're going to pat some on the dough. We're going to flour up here, our rolling pin. And we're just going to roll it out. Now you want to leave this fairly thick because we want a good size biscuit. So we're going to make this-- probably, I would say-- a 1/2 an inch to 1/4 of an inch thick. Probably about 1/2 an inch. So you we get it rolled out. This biscuit actually doesn't really grow out. It just grows up. And one of the tricks-- as a baker that I've found over the years-- is to roll it out at the thickness that you like it. Now, this would actually be 1/2 of the biscuit. So what we're going to do, is we're going to fold it over like this. And we're going to cut it through two layers. And then what happens is-- the great thing is-- they both puff up. But they come right apart because we have a little seal in the middle here. So when we do this, now we have two layers. You can take a glass, cookie cutter, doesn't matter, just a round cutter of any sort. And we're just going to push it through and we have it ready. And then we're just going to push it through. Now, one of secrets with biscuit dough is don't over-roll it. If you work the dough too hard your fluffy biscuit is going to be a hard biscuit. So one extra roll, get what you can out of it. And then it's done. And you want this to be a pretty good-sized biscuit for dessert. So we'll probably get a couple more out of this. You could probably get six if you wanted to really push it. Dust off the extra flour. Now, these biscuits are going to bake in the oven. The oven temperature needs to be at 450 degrees, which is a little high. So make sure your oven is calibrated correctly. Otherwise you're going to have burnt biscuits. We're going to put these on a pan, and we're going to put them in the oven, and we're going to bake them. - See more at: http://cook123.com/recipes/Berry-Good-Shortcake.html .0pj8iR8O.dpuf
