Pav Bhaji, Mumbai street food item, is a mix of healthy vegetables with the best of spices. Potatoes, tomatoes, green peas all mashed together with spices and lemon and paired with buttery pavs is a feast in itself. This is one dish, loved by everyone and cooked with different variations in different households. Pav Bhaji is the smartest way to have all the healthy vegetables together without compromising on the taste.
Pav bhaji is a dish that can be enjoyed at any hour of the day, any season, be it for brunch, lunch or even dinner. It is an essential Indian snack recipe. The best way to feast on Pav bhaji is to serve it with roasted pav buns, some chopped onion, and lemon wedges with chopped coriander to go with it. Don't forget to garnish the Bhaji with loads of butter on top!
Recipe: Indian
Serves: 2 people
INGREDIENTS:
• 1 tblspn Oil and butter mix
• 1 tsp Jeera or cumin seeds
• 4 cubes large butter, finely chopped
• 1 cup onion, chopped
• 1 tsp ginger-garlic paste
• 1/2 cup capsicum, chopped
• 11/2 cup potatoes, chopped
• 1 cup boiled carrots
• ½ cup boiled peas
• Salt as per taste
• 1 tsp chili powder
• 1 tsp pav bhaji masala
• 1 tsp red chili powder
• 1 tsp Pav Bhaji masala powder
• 1 tsp Roasted cumin powder
• 1 cup Coriander chopped
• 1 tsp of Kasuri methi
• 1 bunch coriander leaves
• For Pav:
• Butter
• Pav
• Pav bhaji masala powder

How to Make Pav Bhaji
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
1.Heat oil & butter in a pan. Add jeera and splutter them. Then add ginger garlic paste. Mix well. Now add onion and sauté them till light brown
2. Now add tomatoes and stir fry it till they become soft and mashed. You can also use back of a ladle to make it mushy.
3. Add all spices powder and mix well. Add 1 cup of water and cook for 5 mins.
4. In meanwhile, mash boiled vegetables and keep it ready
5. Once the Pav bhaji gravy is cooked, add the boiled mashed veggies and mix it well
6. Add 2 cups of water and cook it for 5 mins
7. Once done, mix in butter, kasuri methi and chopped coriander
8. Mix well and serve it in a plate.

Prepare Pav:

1.Spread some butter all over the pav
2. Sprinkle pav bhaji masala over it.
3. Toast it on the pan for a while till it becomes golden brown.
4. Serve hot along with a lemon wedge, chopped onion and chopped coriander with lots of butter!
