I've been dreaming of making a whipped up, fluffy pumpkin and cream cheese topping to go on a boba tea. It lived up to my every expectation! Here is what I did: - Cooked my boba pearls. I used these: and just followed the instructions on the bag. Then I stirred in enough brown sugar to coat them. The sugar melted in and coated the boba. - Got my tea steeping. I used DT's Pumpkin Chai, but this would be amazing with any sort of chai, spiced tea, or one of your favorites. I made it as I would for a regular iced tea: use double the amount of tea I'd use for a hot tea, and about half the water. - While the tea was steeping, I whisked the ingredients for the foam together. I used: 1 oz cream cheese, softened 1/4 cup heavy cream 2 tbsp pumpkin puree 1 tbsp of brown sugar (you can use any sweetner you'd like!) 1 tsp vanilla extract 2 tsp pumpkin pie spice a dash of milk (I used oat) to thin out the foam to my desired texture - Once the topping was to my liking, I assembled my drink! First, added the boba to the bottom of the cup. Then filled the remainder of my cup almost to the top with ice. Next, I steeped my concentrated tea into the cup. Then I spooned the pumpkin cheesecake topping onto the top. For a finishing touch and some texture, I added a few Trader Joe's pumpkin spice pumpkin seeds. Enjoy!
