my first every 'what i ate in a day' video! i hope it's helpful & interesting for you guys. i literally included everything i ate in a day from start to finish (including my afternoon cookie snack break). it's so easy to eat real, whole foods when you go plant-based! for me, it's just much more delicious and satisfying when i eat real, vibrant foods. i love making easy, vegan meals and as promised, will include some links to some of the healthy recipes from this video below! recipes // cinnamon almond butter banana overnight oats | http://asunshinemission.com/taste/tasty-tuesday-cinnamon-almond-butter-banana-overnight-oats/ baked sweet potatoes & avocado toast | for the baked sweet potatoes: 1. preheat your oven to 225 degrees celsius 2. cut 3 medium-sized sweet potatoes (mine were regular & japanese sweet potatoes) into fries or cubes 3. cook in a pot of boiling water for 5 minutes 4. remove from heat and pat dry 5. coat in any spices you'd like (i used onion powder & garlic powder) 6. place on a baking sheet lined with parchment paper 7. bake in the oven for 30 minutes, flipping halfway through 8. serve with ketchup and dig in! for the avocado toast: 1. toast a piece of vegan/gluten-free bread 2. cut open a ripe avocado and spread half of it onto your toast 3. drizzle with 1 tsp of tahini 4. sprinkle on a pinch of sea salt 5. enjoy! vegan peanut butter cookies | https://www.youtube.com/watch?v=qDv3I-Sc6D8 kidney bean & tahini taco pizzas | 1. preheat oven to 200 degrees Celsius 2. bake two corn tortillas in the oven for 10 minutes *take out when the edges start to brown 3. drain and rinse 1 can of red kidney beans 4. mash the kidney beans with the back of a fork 5. mix in spices (i used about 1 tsp of garlic powder, onion powder, and nutritional yeast) 6. take tortillas out of the oven and spread on kidney bean mash 7. drizzle with 1 tsp of tahini 8. place back in the oven for about 5 minutes, just enough to warm them up 9. take out of the oven, sprinkle on a pinch of Himalayan sea salt 10. enjoy! catch me on // instagram | https://instagram.com/asunshinemission/ facebook | https://www.facebook.com/asunshinemission/ pinterest | https://www.pinterest.com/sunshinemission/ recipes HERE | http://asunshinemission.com/recipe-index/
