Cotton Soft Japanese Cheesecake (8 inch) Lately, I have been baking this cheesecake for all my friends and family. They absolutely love this cheesecake very much. It isn't too heavy but it is still very fluffy and creamy. It's like eating a cloud...the cheesecake melts in your mouth. :) For me...I had to adjust the temperature, bake it a few times to get a near perfect cheesecake. I still occasionally get a few cracks on the cheesecake ha ha...
