Daging sapi bisa diolah menjadi berbagai macam masakan. Salah satunya, daging cabai hijau. Tekstur daging yang empuk dipadukan dengan sambal cabai hijau yang pedas dan gurih. Makin lezat disajikan dengan nasi putih. Resep Daging Cabai Hijau (untuk 6 porsi) Bahan: 600 gr daging sengkel Bumbu halus: 6 siung bawang merah 10 siung bawang putih 2 butir kemiri 4 cm lengkuas 1 ruas kunyit 3 cm jahe 100 ml minyak Bahan lainnya: 6 lembar daun salam 1 batang serai, geprek 100 gr gula merah 2 sdm kecap manis 2 sdt garam 2 sdt kaldu bubuk / penyedap 1 sdt merica ±1500 ml air Sambal cabai hijau: 5-6 siung bawang merah 10 siung bawang putih 1-2 buah / 4-8 gr terasi 100 ml minyak 2 buah tomat hijau 20 buah cabai rawit hijau, cincang 8 buah cabai hijau, cincang 4 buah cabai gendot, cincang 1-2 sdt garam ¾ sdm gula ¾ sdt penyedap ¼ sdt merica Lainnya: 8-10 buah cabai rawit hijau, iris Langkah: 1. Blender bahan bumbu halus, tumis dengan daun salam dan serai hingga kering 2. Masukkan daging dan masak permukaan daging hingga kecokelatan sambil sesekali diaduk hingga tercampur rata lalu masukkan air, kecap manis, gula merah, garam, merica, dan kaldu bubuk / penyedap, masak hingga daging empuk ±1 jam. Apabila air mulai susut, tambahkan lagi air secukupnya 3. Setelah empuk, sisihkan daging dan biarkan dingin lalu iris tipis 4. Untuk sambal cabai hijau, blender bawang merah, bawang putih, terasi, tomat hijau, dan minyak hingga halus 5. Tumis bumbu halus hingga setengah kering lalu masukkan cabai hijau cincang, tumis hingga kering dengan api kecil sambil diaduk-aduk 6. Masukkan daging yang sudah diiris, bumbui dengan garam, gula, merica, dan penyedap 7. Masukkan cabai rawit iris sesuai selera, matikan api lalu pindahkan ke piring saji 8. Green Chili Beef (yield: 6 servings) Ingredients: 600 g beef shank Blended Spices: 6 pc shallots 10 clove garlic 2 pc candlenut 4 cm galangal 2 cm turmeric 3 cm ginger 100 ml oil Other ingredients: 6 pc bay leaf 1 pc lemongrass, pounded 100 g palm sugar 2 tbsp sweet soy sauce 2 tsp salt 2 tsp stock powder / flavor enhancer 1 tsp pepper ±1500 ml water Green Chili Sambal: 5-6 pc shallot 10 clove garlic 1-2 pc / 4-8 g shrimp paste 100 ml oil 2 pc green tomato 20 pc green bird’s eye chili, chopped 8 pc green chili, chopped 4 pc habanero, chopped 1-2 tsp salt ¾ tbsp sugar ¾ tsp flavor enhancer ¼ tsp pepper Others: 8-10 pc green bird’s eye chili, sliced Steps: 1. Blend the spices and sauté with bay leaves and lemongrass until reduced. 2. Add the beef in and cook until it’s browned. Stir well, then add water, sweet soy sauce, palm sugar, salt, pepper, and stock powder / flavor enhancer. Cook until tender for ±1 hour. If the braising liquid is reduced, add more water as necessary. 3. After the beef is tender, set aside and let it cool. Then, slice the beef thinly. 4. For the Green Chili, blend the shallots, garlic, shrimp paste, green tomato, and oil until smooth. 5. Sautè the blended spices until half-reduced. Then, add the chopped green chili and sauté until reduced with low heat while stirring. 6. Add the sliced beef. Season with sugar, salt, pepper, and flavor enhancer. 7. Add the sliced bird’s eye chili, to taste. Turn the heat off and plate. 8.
