ELLICSR Kitchen's video: Chickpea Bolognese Sauce

First up is our Chickpea Bolognese 'style' Sauce. 1 can of chickpeas (drained/rinsed) 1 carrot roughly chopped 1 onion roughly chopped 2 cloves of garlic 1 tsp dried basil 1/2 tsp chili flakes 2 tbsp dried mushrooms (optional) 3 cups can/jar of tomato pulp/puree 2 tbsp olive oil In food processor, pulse chickpeas & dried mushrooms until coarse ground. Add to pot, med hear w/ olive oil. 3 min, stir. Pulse garlic, carrot, onion, basil & chili flakes until minced. Add to pot, season w/ salt, stir, cook another 5 min. Add tomato & 2 cups water. Bring to boil, reduce heat, cover & simmer 40 min. Lid off, cook on low 20 minutes until thick. Season to taste. Freeze portions for later use.
