Here is a video on Ayam Masak Merah recipe that is vegan and vegetarian-friendly! It's a Malaysian dish that is commonly found at pasar malam (night markets) during Ramadan and it literally translates to chicken "cooked-red" in English. Traditionally, the meat is cooked in the tomato sauce over a period of time until the meat softens. In this recipe, I will show you a plant-based version that is equally delicious and cruelty-free! Watch the full video for the ingredients & method :) The reason why I prefer Pestle & Mortar than Blender: I experimented this recipe 3 times with blender and pestle and mortar. In my experience, I found that the blender only cuts the ingredients finely but does not actually break them down as effectively as the pestle and mortar. Consequently, I could still taste raw onions when I cooked them onto the pan with the tomato sauce and tomatoes. Plus, the pestle and mortar brings out a stronger aroma and flavour of the smashed ingredients.
