I made a one pot pasta vegan recipe that is super quick, easy and healthy! In conjunction to Earth Day 2018, I wanted to share an idea on how you can lower your waste for your next meal prep :) I understand that not everyone will have a compost bin - instead, here are the other simple ways to lower your waste in your everyday food life: 1) Check what's in your fridge before purchasing at the grocery store (I used the leftover vegetables even though they were not as fresh or crunchy anymore with bruises) 2) BRING A BAG TO THE GROCERY STORREEE 3) Buy minimal to no waste ingredients. FOR EXAMPLE, why would you buy a bottle or can of tomato sauce when you can make your own with fresh ingredients :) 4) When chopping up the ingredients, use as much as possible! 5) Use only one pot/pan/tray (if you are baking) 6) All those takeaways you did in the past? I hope you saved the containers cause you can reuse them for your meal prep like I how I did in this video! ↓↓↓↓↓↓↓↓↓ RECIPE IS BELOW ↓↓↓↓↓↓↓↓↓↓↓ O N E - P O T - P A S T A Enough for 4 pax Ingredients: ✿ 400g penne pasta ✿ 5 cloves of minced garlic ✿ 6 cups of chopped tomatoes ✿ 1 cup of chopped onions ✿ 1/3 cup of chopped dry chili with the seeds ✿ 3 tablespoon of soy sauce ✿ a handful of sweet basil leaves ✿ 1/2 cup of diced carrots ✿ depending on your pot, prepare water to fill up the pot so that the water level is 2 cm above the pasta. IF YOU HAVE VEGETABLE STOCK, it's better to use that for extra flavour. ✿ a pinch of salt & pepper for taste Method: ✿ On high heat, stir fry the onions, garlic, carrots, tomato, chili, and basil. ✿ Lower down to medium heat and pour in the penne pasta, soy sauce and water. ✿ Once the pasta has cooked and absorbed the liquid, stir the ingredients to ensure that everything is mixed together. Add salt and pepper accordingly to your preference.
