Ellie The Earthling's video: BEST Vegan Brownies EVER Gluten Free

FULL RECIPE BELOW This is my secret recipe. Yes, there is a secret ingredient. This recipe has been YEARS in the making and I can fully guarantee that these will be the best, most gooey, melt in the mouth vegan brownies you will ever taste. You will not be able to tell they are vegan. Honest. METHOD -------------------- Preheat oven to 170C/Gas 3 Grease a 8"x12" brownie tin. Prepare sweet potato puree. Combine dry ingredients in a large bowl. Combine wet ingredients in a smaller bowl. Add wet ingredients to dry ingredients. Add a bit of soya milk if too stiff to stir. Pour into tray and bake for 25 - 35 minutes until JUST done. This is not when a skewer comes out clean, it is when you can press the brownies and they spring back. You want the inside to stay slightly moist. Leave to cool, cut, and enjoy! INGREDIENTS -------------------- 200-250g Sweet potato puree (approx 1 medium sweet potato) 200g gluten free flour 120g cocoa powder 200g sugar (I used golden castor but you can use whatever you prefer) 100g vegan chocolate chips 50g chopped pecans 125ml light oil e.g. sunflower (coconut would be nice though) 100ml maple syrup or agave syrup 180ml full fat coconut milk 3/4 tsp baking powder 1/2 tsp salt Extra soya milk to make them pouring consistency Adapted from a recipe from the book "Divine Vegan Desserts" by Lisa Fabry ----- Care about the environment?
