It is so easy to make, and turns out super tender. ‘Just like cotton’, we say in Turkish. I cook the bread in water bath. So the top part looks more golden brown, but baking gently in water bath, helps to keep the bread very moist. Hope you give this amazing recipe a try! To stay tuned upcoming videos SUBSCRIBE here: https://www.youtube.com/c/ElvancaTarifler You can support my channel by Patreon: https://www.patreon.com/ElvancaTarifler INGREDIENTS *I use a 200 ml. glass to measure 230 gr. all purpose flour (2 cups, spooned and leveled) 2 eggs (at room temp) 100 ml. milk (1/2 cup) 100 ml. olive oil 1 cup black olives, preferably unsalted 1 pack baking powder (1 tbsp) 1 heaping tsp dried mint flakes Salt & pepper DIRECTIONS Butter a 11x28 cm. (4x11 inches) loaf pan, then dust with flour, remove any excess. If using a different pan, baking time may vary. Preheat oven to 180C. (356F) Remove pits from olives and chop coarsely. Check to see how salty they are. Measure 2 cups spooned and leveled flour, transfer to a bowl You need 230 g. flour in total. Add baking powder and salt to taste, on top of flour. I add 1 leveled tsp when using unsalted olives. Add a pinch of black pepper. Mix dry ingredients, set aside. Transfer eggs to a big bowl and beat, using a wire whisk. Add milk and olive oil on top, beat again. Add 1 heaping tsp dried mint flakes, mix. Sift dry ingredients on top of wets. Mix gently. Switch from wire whisk to a spatula. Add olives to the dough, and mix well using the spatula. It should be a very soft dough. Spoon dough into the prepared loaf pan. Spread evenly, making sure there are no holes. Drizzle with 2-3 tbsp olive oil, spread using a brush. Place the loaf pan into a larger baking dish, then add 3-4 cups hot water into the large dish. Bake for 35-40 minutes. Or until a toothpick inserted in center comes out clean. Let cool for about 15 minutes, over a wire rack or racks of your gas stove. Gently loosen the edges, with a butter knife. Transfer olive bread to a wire rack, let cool completely. Using a serrated knife, slice gently and enjoy.
