Peel the potato, and cut into approximately chickpea size cubes. In a large pan, heat olive oil and butter, over medium low heat. Add the onion, sprinkle a pinch of salt and pepper. Sautee for about 3 minutes, or until slightly tender, stirring occasionally. Add green peppers, sautee for about 3 minutes, stirring occasionally. Sprinkle a good pinch of sweet paprika. Add tomato paste and cook for 1 minute, stirring constantly. Add tomato puree. Sprinkle a pinch of sugar, mix. Add bulgur and potato. Mix well, until everything is covered with the sauce. Add 2.5 cups hot water. Add 1.5 leveled tsp or to taste salt, a pinch of black pepper. Mix and bring to a boil, over medium high heat. Then, reduce heat to the lowest possible setting. Cover and cook for about 18-20 minutes or until water is absorbed. Shake the pan to mix, occasionally. Make sure to check the water level at the bottom of the pan, with a spoon. Turn off the heat. Cover the pan with paper towels and the lid. Let rest for about 10-15 minutes. Mix gently. Transfer to a serving plate and enjoy. It tastes amazing, using potato in pilaf is a very good idea!
