Eric Lanlard's video: Eric Lanlard s Hot Chocolate Fondant with Orange sauce

The weather is getting colder so this dessert is hot and chocolate-y, perfect for staying in , it's my Hot Chocolate Fondant with Orange Sauce ! My recipe is below ... Ingredients: For the fondant: 125g butter 20g cocoa powder 200g dark chocolate 2 eggs 2 egg yolks 25g plain flour Orange Compote: 1 orange 2 tablespoons sugar 100ml white wine 1 tsp spoon cornstarch Some water Preparation: 1. Preheat the oven to 180°C, gas mark 4. 2. Spread the ramekins with butter and dust them with cocoa powder. Shake any excess powder off. Put the ramekins on a baking sheet. 3. Place the chocolate and butter in a heatproof bowl and place over a saucepan of boiling water. Make sure the bowl does not touch the surface. Stir until the chocolate has melted and you get a smooth mixture. Remove the bowl from the pan and let the chocolate cool slightly. 4. Place the eggs, egg yolks and sugar in a large mixing bowl. Beat with an electric mixer at the highest setting until the mixture is thick, white and fluffy and doubled in volume. Add the cooled chocolate mixture to the eggs and the sugar and fold finally the flour. 5. Fill the ramekins with the batter until ¾ full. Place in the oven for 12 minutes. 6. Meanwhile, make the compote. Put the orange slices in a pan, stir in the sugar and let cook gently until they begin to sizzle. Add the wine and the cornstarch and reduce until a thick sauce is formed. 7. Remove the fondants from the oven and use a sharp knife along the edges of each ramekin to loosen them. Invert them on plates and carefully remove the ramekins. Serve immediately with the orange compote. Happy Baking !! Eric xx
