SOFT & CHEWY OATMEAL COOKIES Ingredients: 1 cup unsalted butter (227 grams) 1 cup white sugar 1 cup brown sugar 2 eggs 1 teaspoon vanilla extract 2 cups all purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 1/2 teaspoons ground cinnamon 3 cups quick cooking oats Instructions: Preheat the oven to 375 degrees fahrenheit or 190 degrees celsius Prepare cookie sheet Then start with creaming— Add 1 cup of unsalted butter, 1 cup of white sugar, 1 cup of brown sugar, add 2 beaten eggs and 1 teaspoon vanilla extract. In a separate bowl— (dry ingredients) add 2 cups of all purpose flour, 1 teaspoon baking soda, 1 teaspoon salt and 1 1/2 teaspoons ground cinnamon. Mix. Add the dry ingredients into the butter and sugar mixture Add 3 cups of quick cooking oats. Mix together thoroughly. Grease cookie sheet— Scoop with 2 inches apart Bake for 8 minutes. Turn off the oven and leave it there for additional 5 minutes before transferring. Let it cool completely. Serves 14 cookies.
