What is it like to spend COVID with a family on Airbnb? My host mom Jaya teaches me Mangalore cooking lessons each day in her Bangalore home. Now, on day 58 of the lockdown, I am ready to share a few of those recipes: If you cook a recipe, please share it and tag me: https:www.instagram.com/erikdouds I'm no chef so take these recipes loosely. Leave comments for corrections and your tips. 1. Chana Masala Cook 1 cup of chickpeas in a pressure cooker for 15 minutes i) soak beans overnight ii) drain beans, add to cooker iii) cover chickpeas with water iv) 1 whistle. simmer for 15 minutes. While the chickpeas are cooking, sauté the aromatics in oil: v) mixed chopped onion with garlic-ginger paste vi) add grated tomatoes add spices: vii) red chili, coriander, garam masala Drain the chickpeas. Toss the chickpeas with the aromatics. Optional: add a big ol' dollop of cream. (don't get the reference? Google "Do a dollop") ---------------------------------- 2. Shredded cabbage (my favorite) Heat coconut oil in a pan: i) add cumin seeds ii) add big spoon of chana dal (yellow lentils) + black gram dal (white lentil) iii) add onion and garlic iv) add curry leaf Add in shredded cabbage (1/2 a head for 2-3 people) v) add a pinch of turmeric vi) half cup of water to steam vii) close lid, simmer for 10-15 minutes ---------------------------------- 3. Dal aka lentils aka Delicious Affordable Lunch In the pressure cooker: i) 3 chopped tomatoes, 1 cup of dal, water to cover, 1/2" ginger, 2-3 green chili ii) 1 whistle and then simmer 10-15 minutes Heat oil in a pan: ii) 10-12 smashed garlic cloves, cumin seeds, chopped onion iii) add curry leaf and turmeric Add the cooked dal with the aromatics. Serve over rice. Enjoy with cabbage. ---------------------------------- 4. Tomato Rasam aka tomato soup i) boil 3-4 tomatoes, 1/2" garlic, 3 green chilis ii) let cool. then mix in blender Heat oil in a pan, iii) add smashed garlic, chopped onion, cumin seed, and curry leaf Add spices, iv) cumin, turmeric, red chili Add the blended tomato purée to the aromatics. Add 1 cup of water to thin until desired consistency. ---------------------------------- Want more?
