Hi! I am back with this requested meal prep! Recipes below: Green smoothie A handful of kale, 1 peeled lemon, and one frozen banana. Add liquid and blend Chocolate Quinoa Porridge 3 cups quinoa soaked overnight and rinsed 2 liters of almond 2 cinnamon sticks 1 Tbs cinnamon 1/4 cup date syrup 1/2 cup cacao powder Simmer quinoa, milk, and cinnamon until quinoa is slightly tender for 10 minutes. Then add remaining ingredients until quinoa is soft. Roasted Plantain 3 ripe plantains Cut the plantains in a diagonal and bake for 20 minutes. You can season with olive oil and salt. Cabbage Salad 1 full cabbage 4 diced Roma tomatoes half of a thinly sliced yellow onion 1/3 cup white vinegar Juice of one lime Salt to taste Sautéed Chickpeas 3 cans of rinsed chickpeas 1 diced yellow onion 2 finely chopped garlic cloves Salt to taste Sauté onion, garlic, and chickpeas until caramelized Chickpeas in Tomatoes 2 cans rinsed chickpeas 1 diced yellow onion 3 finely chopped garlic cloves 2 Tbs tomato paste 2 large cans of unsalted tomato puree 1 bunch of kale chopped Half a bunch of finely chopped flat leaf parsley Sauté onion and garlic then add the rest of the ingredients and simmer for 10 minutes Spaghetti Squash Halve on squash and roast dry in the oven for 30 minutes until tender.
