This is a petition to make bibingka pancakes a regular breakfast meal! 🥞 We are feeling all the buzz of the holiday festivities and we think we should start every day with these Christmas-inspired pancakes. Try this at home today! 🎄 BIBINGKA PANCAKES 1 cup rice flour 1 cup all purpose flour 4 tablespoons sugar 1 tablespoon baking powder 1/4 teaspoon salt 2 medium eggs 2 tablespoons oil (or butter) 2 cups coconut milk 1/2 teaspoon vanilla extract ½ cup of butter salted egg (sliced) 1 can condensed milk 1 cup freshly grated coconut 1/2 block of processed cheddar cheese Procedure: 1. In a large bowl, whisk in the eggs. Add in all the other pancake ingredients and mix well. 2. Melt a tablespoon of butter in a nonstick pan and pour in ¼ cup of pancake batter. You may adjust the amount to your preference. 3. Top the pancakes with slices of salted egg. Once the top is bubbly, flip the pancakes to cook the other side. 4. Top the pancakes with more butter, condensed milk, freshly grated coconut, and cheddar cheese.
