Add garlic and cook for 1 minute. Add the capers and tomatoes. Stir well to combine and bring to a simmer over medium/high heat. Tuck the fish filets into the sauce, covering and immersing in the sauce to cover as much as possible. Cook over medium heat for 8-10 minutes, turning halfway through or until fish is cooked through. Serve over rice and enjoy! Granola by Faith and Flour 8 cups rolled oats 1 cup sunflower seeds 1 cup chopped pecans 1 cup pumpkin seeds 1 cup coconut flakes (unsweetened) 1/4 cup flax seeds 1/3 cup olive oil 1/3 cup maple syrup 2 tsp. cinnamon 1/2 cup dried fruit (I used chopped apricots) Preheat oven to 350 degrees F. Mix all ingredients except dried fruit in a large baking or roasting pan. Spread evenly. Bake for 30 minutes total. Remove from the oven and stir every 10 minutes to roast the granola evenly. When the granola is finished baking, remove from the oven and add the dried fruit. Stir and allow the granola to cool on the countertop.
