Basque Burnt Cheesecake Recipe Why is it called Basque burnt cheesecake? It is said to have originated in 1990 in San Sebastian, Spain. The original recipe has a handful of ingredients: cream cheese, cream, sugar, eggs, and flour. Basque cheesecake is often called “burnt” cheesecake due to its iconic rich dark surface. Unlike American cheesecake, Basque cheesecake does not have a crust. It doesn’t require a water bath and is so simple to make. Given it’s overly dark and cracked top crust, it could be easily mistaken as a baking situation gone wrong. Lacking a biscuit base with a soft gooey creamy center, it pretty much seems like the total anti-cheesecake. How to make Basque Burnt Cheesecake Ingredients: 500 grams Cream cheese 1 cup caster sugar (adjust the sweetness according to your preferences ) 2 tbsp. cake flour 2 egg yolks -medium 2 whole eggs medium 300 grams whipping cream 1 tsp vanilla 1 tsp lemon NOTE: Bake @ 220 degree Celsius. Bake for 25- 30 minutes in middle rack. Heat up and down. In this recipe I use 8" mold. You may use 6-7 " to allow the cheesecake rise.
