Do not get feared of the Sous Vide part, this dish can be made by baking the salmon in the oven. Sous Vide just give the final touch to the taste and texture. Salmon is a nice piece of meat and is therefore also cooked quickly, but before we get there I will prepare my salmon. You may risk a white substance on the salmon after cooking. This can be avoided by doing as in the video. I make a fast dry brine with sugar and salt on the meat, wait 10 minutes and rinse clean. This gives better consistency in the finished result and removes the previously mentioned white substance on the fish. Otherwise, it's just onwards: TEMPERATURE: I give SALMON 118F, could work with 122F, but I think that everything above this will be to much. It's a personal matter, play your way to your preffered temp. THE TIME: SALMON will only get 25-30 minutes. The piece here in the video got a little too long, and you can sense it on the texture. So beware. Otherwise, just pack your meat with a little oil and a little salt and then in the bath. 118F and 25-30 minutes, then it will be amazing when served.
