So naturally we decided to take a classic BLT and turn it into a pasta. Thus, our bacon meatball pasta with romaine pesto and heirloom tomatoes was born-- all the flavor of a BLT with the heartiness of pasta. PASTA Equipment large pot bowl strainer tongs plastic wrap Ingredients Fresh Spaghetti Water Salt Olive oil Preparation Cook pasta in salted water according to directions on packet toss in olive oil Keep warm in covered bowl b. ROMAINE PESTO Equiment food processor small pan knife Ingredients 1/2 cup plus 2 tablespoons extra-virgin olive oil 1 large head romaine 1 large garlic clove ¼ cup shelled pistachios, toasted 1/4 cup loosely packed fresh flat-leaf parsley leaves 1/2 teaspoon salt 3/8 teaspoon black pepper 1 oz finely grated parmesan (1/2 cup), plus additional for serving Preparation Add all ingredients to food processor pulse until smooth if too thick, add more oil, little by little c. BACON MEATBALLS Equipment Food processor ice cream scoop (disher) pan or lined sheet pan rubber spatula Ingredients 1/2 pound each: bacon, ground beef, and ground pork 2 large eggs 1/2 c. bread crumbs 1 onion, minced 1 tsp. each: black pepper, cayenne, oregano, garlic powder Preparation Pulse all ingredients in food processor until just combined Use disher or hands to shape into balls. Cook in pan on medium, or in oven at 400 let cool a little, cut in half ASSEMBLING DISH Equipment Large bowl or plate Tongs cheese and cheese grater knife Instructions toss pasta in pesto plate pasta slice tomatoes and add them to pasta top with meatballs sprinkle with parm.
