Punjabi Pakoda Kadhi recipe
Ingredients for Kadhi:
1.25 cups whole milk yogurt
1 cup yogurt water or plain water
4TBSP Besan/Chick Peas flour
4 TBSP Mustard Oil
1 TSP Methi/Fenugreek seeds
3 dry chilies
1 TSP Jeera & Mustard seeds each
Pinch of Hing/Asafoetida
1 in ginger - peeled n slivered
4 cloves of garlic - minced/paste
1.5 TBSP cumin/coriander powder mix
1 TSP red chili powder
1 TSP turmeric
1 TSP dry fenugreek leaves
1.5 liter water
few cilantro sprigs for garnish
salt to taste
Ingredients for Pakoda/Fritters
1 large onion or 2 shallots - chopped
1 cup Besan/Chick Peas flour
1 TSP red chili powder
1/2 tsp garlic powder or fresh garlic
1/2 TSP turmeric
1/2 TSP baking soda
water as needed
salt to taste
2 to 3 cups of veg. oil for frying fritters
Method:
In a blender mix 4 TBSP Besan/Chickpeas flour, yogurt & yogurt water, set aside. Now heat a large non stick saucepan and add veg. oil to it
Once oil is hot add fenugreek seeds. As these start to splutter add, cumin and mustard seeds. Now add Hing/Asafoetida
Lower heat to medium and add ginger and garlic.
Saute for a minute then add coriander-cumin powder mix, red chili powder
and turmeric. Mix well
Now bring Punjabi Kadhi to a boil then lower heat and add salt
Mix well and let it cook for 25 mins. Be sure to stir it constantly with spatula
Our Punjabi Kadhi will be reduced to a silky thicker consistency. Set aside
In a mixing bowl add all ingredients listed for fritters except veg.oil
Mix well, add water as needed to create a thick batter
Next in a small frying pan add oil. Once oil is hot add batter by using a tablespoon and fry to create dumpling like Pakoda/fritter. Cook on both side and remove once golden brown
Add Pakoda/fritters to Punjabi Kadhi that we set aside and simmer for 2 mins. Wallah! Our Punjabi Pakoda Kadhi is ready!
Transfer to serving bowl and garnish with chopped cilantro
