Alook Palak Sabzi Recipe
Ingredients for Spinach Sauce:
200 grams spinach leaves
1.5 TBSP green chili mince
3 cloves of garlic -peeled n flattened
1 inch ginger root - peeled
1/2 cup water
Other Ingredients:
3 potatoes - peeled and cut into large cubes
1 onion - chopped
2 tomatoes - peeled and chopped
3 TBSP veg. oil
1 TBSP cumin Seeds
Pinch of Hing (Asafoetida)
5 black peppercorns
1 small cinnamon stick
3 cloves
1 TSP - red chili powder
1 TSP - turmeric
2 TBSP - cumin/coriander powder mix
1/4 TSP garam masala
1 TBSP - dry fenugreek leaves - crushed
2 TBSP plain yogurt
1/2 cup water
salt to taste
cilantro sprigs n slivered ginger for garnish
Method:
In a preheated saucepan add spinach leaves, cover with lid n let them wilt
Remove wilted spinach leaves and add them to food processor
Net add garlic, green chili & water to food processor, created sauce/slurry
Now add veg.oil to same saucepan, set it on medium setting
Then add peppercorns, cinnamon stick, and cumin seeds
Once cumin seeds start to pop at hing/asafoetida
Then add, cumin/coriander mix powder, red chili powder, turmeric
Mix well then add tomatoes., cover and cook for 2 to 3 mins, until soft
Now add Spinach sauce/slurry, mix well, cook for 2 more minutes
Add potatoes, mix well then add salt to taste
Next add water, fenugreek leaves, mix well then add yogurt
Blend in the yogurt by mixing it quickly, add garam masala
Cook covered for 20 minutes on medium
Once potatoes are cooked your delicious dish is ready!
Transfer to serving dish & garnish will few cilantro sprigs n ginger slices
