I love these chickpea and lime tahini tacos! They are so flavorful and have lots of protein and healthy fats. This is a perfect summer time lunch or dinner recipe. It's delicious and satisfying and provides a good amount of leftovers too! :) Find more healthy vibrant vegan recipes on my blog at www.GinnyWilliamsBlog.com Tahini & Lime Chickpea Tacos Recipe | Vegan 6 Tbsp runny roasted tahini 1/4 cup lime juice 4 tsp pure maple syrup 2 tsp onion powder 2 tsp garlic powder 2 tsp chili powder 2 tsp cumin 1/2 tsp sea salt 1 (15-oz) can chickpeas, drained and rinsed Optional Additions: Tortilla Lettuce Diced red onions Diced tomatoes Fresh lime juice 1. In a small bowl whisk together the tahini, lime juice, maple syrup, onion powder, garlic powder, chili powder, cumin, sea salt, and 2 Tablespoons of water. 2. In a separate bowl combine the chickpeas and 1/2 cup of the sauce and mash with a fork until it all comes together. Leftover sauce can be stored in a mason jar for another use. 3. Assemble your taco!
